The changes he describe would look more like a step function since once applied, the effects wouldn’t take more than a generation to take effect. Instead, the factors that affect our society are causing us to eat at a non linear rate.

The problem with making an observation like that is there are so many factors you are observing. There has has also been a corresponding jump in in sugar consumption. But take your thinking back a little and think about what regulates fat accumulation and fat metabolism. Insulin regulation has to be the foundation of your discussion about fat. There are far more questions you have answer if you don’t talk about insulin. Why do women in menopause gain weight with no change in calories?

Overweight & overfat: 2 different things: Caloric deficit will eventually leave one at the “correct weight”, but if a diet is filled w/sugars, this “correct weight” will be achieved by lowering the mass of muscles bones & internal organs while raising fat mass.
